Our potato processing sector has grown into a global actor in just a few decades. Retaining that position in a competitive global market requires potato processing companies to continue investing in process efficiency and product innovations that meet the needs of consumers worldwide. The challenges? Consumer wishes are dynamic, potato products are diverse, quality and food safety must be ensured, etc. Process efficiency and striving for sustainability go hand in hand, though implementing innovations in existing processing lines is not always simple. The goal of this concept is R&D-driven innovations that lead to new potato products and increased knowledge about optimising and more sustainable subprocesses in industrial potato processing.
